The garden is now ready for snow.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;From top to bottom:&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-One of three bulk containment areas for leaves. In the foreground you can see part of the leeks that are being left in the ground over the Winter. &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-Remaining leeks. These have been re-mulched and will spend the Winter, the hope being they will be useable in the Spring.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-One section of blueberries with a fresh layer of pine needle mulch.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-View of one mulched area. This is where the beans were this year.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-Asparagus patch in the background. The patch has been fertilized with Pro-Gro organic fertilizer, coated with wood ashes and then covered with leaves.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-Northwest section of the garden with another bulk containment area for leaves. The tilled ground has been planted to winter rye as cover crop.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-Between the bags on the left and the string on the right is a new area prepared for next year. The area has been coated with shredded leaves.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-Another view of the northwest corner of the garden, this one looking southeast. &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-On the right is one of two sections of garlic planted in November. This area has been coated with straw that came from a cover crop of oats. The pictures were taken the 27th of October.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;From the top down:&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-The pile of bags to the right will be staged around the garden for easier access in next year's garden. They will also be placed in areas to suppress emergence of weeds in the Spring. You can see some green leeks still in the ground.&lt;br /&gt;&lt;/div&gt;&lt;div&gt;-Here is a bulk containment area. It has chicken wire on the sides and bags of leaves at each end. Waite has 5 or 6 containment areas located throughout the garden.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-This is a sub-section of Waite's garden with bags of leaves around the perimeter. This is the area where he had beans last year.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-This is a general view of the northwest part of the garden. You can see that the oats (planted as a cover crop) are still green. Their first step was to install an old washing machine motor to drive the chopper. The chopper cuts up the apples for more efficient pressing.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;The sequence of pictures somehow got reversed when I posted them. The following descriptions apply from the bottom up:&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;-Apples staged in Waite's garage. All the apples he gathers are free. He exchanges permission to pick the apples for cider and applesauce. (He presses the apples. His wife makes the applesauce.) Strangely enough, most people with apple trees do nothing with the apples and so are happy to make the trade. When making cider, it's a good practice to let the apples sit for a week to 10 tens after picking. This increases the sugar content.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;-The set up: This picture shows everything ready to press. The cider press is on the right; you can see the old washing machine motor. The chopper box is on the upper left of the press. A crate of apples sits ready to be processed. To the left is a work table. Each crate of apples will produce approximately 1 gallon of cider. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;-Here is a close up of the apples. Waite keeps track of which apples are which so that he can return the proper cider to the people who own the apples. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;-This is a picture of the chopper. The motor spins it fairly rapidly and apples are chopped fairly quickly. He has to be careful not to put too many apples at one time. It takes about 5 minutes to feed a crate of apples through. He will usually put two crates through the chopper before pressing.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;-This what the apples look like after going through the chopper. The apples here are the result of chopping one crate of apples. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;-This picture shows the press plate installed over the chopped apples. In this case he is pressing only one crate of apples. The pressing mechanism is turned by hand. You can see a large threaded rod in the second picture. In this picture if you look closely you can see juice beginning to ooze out. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;-Here the juice is flowing out of a hole in the bottom plate and into a collection container. Note the small pieces of chopped apple laying about. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;-This is some of the finished product. From the collection pan, the cider is poured through a very fine mesh strainer into a funnel and into the bottles. These are some of the containers that he returns to the owners of the apples, gives to friends, and keeps for his own drinking. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;-The final picture shows "cider for the big boys." This is a 6 gallon carboy destined to become hard cider. So far (October 5, 2009) he has three carboys filled and plans on doing at least 3 more, giving him a total of 36 gallons of hard cider for the coming Winter. The final total will be less than 36 gallons after racking over from primary to secondary fermentation. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;One part not shown in this sequence is the pumice - what's left over after extraction of the juice. He takes the pumice to his neighbor Clem for feeding to the pigs. Some leeks and arugual remain.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-There are quite a few leeks stil in the ground.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-The grapes are ripening.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-In the upper right you can still see some oats planted as a cover crop. Plants in the center background are tobacco.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;-General view with most crops removed. Note the amount of  leaf mulch remaining on the ground. Moose Tubers is a subsidary of Fedco Seeds, where he gets his seeds every year. These are pictures of the varieties he grew this year. This section was covered with oats as a cover crop. On the right side of the cleared area Waite put down three 30-gallon totes of wood savings and chicken manure from the chicken operation with his neighbor, Clem. He then raked the oats from the left side over the chicken manure. He will plant this section next year to a food crop of some type, probably squash.&lt;/div&gt;&lt;div&gt;-In the center are two rows of Blue Lake Beans. On the far left you can see part of the buckwheat cover crop. Between the buckwheat and the beans is a row of cornichon cucumbers.&lt;/div&gt;&lt;div&gt;To the right of the beans is a section of Amish Paste Tomatoes. &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt; He put split-leaf maple on the tops and sides of the hills. Next he will fill in between the rows with other bags of leaves. In fact he doesn't like too many vegetables; he just likes to grow them. He works with his neighbor, Clem, raising pigs and chickens to supply meat for the long Vermont winters. Clem has a small barn and likes to raise animals. He doesn't like to garden and so he and his wife get all their vegetables for their own consumption from Waite's garden in exchange for use of his barn for the pigs and the chickens.&lt;br /&gt;&lt;br /&gt;On June 19 Waite and Clem butchered 26 chickens...well, actually 25, because, as it turned out after some investigative and tracking work by Clem, Clem's dog somehow managed to grab and run off with a beheaded chicken without anybody's noticing it.&lt;br /&gt;&lt;br /&gt;Here are some shots of the operation.&lt;br /&gt;&lt;br /&gt;From the upper left to the right:&lt;br /&gt;&lt;br /&gt;A chicken being removed from the plucker. The plucker is motorized and can pluck two chickens in less than a minute.&lt;br /&gt;&lt;br /&gt;Clem (left) and Glenn Cole -owner of the equipment- load two chickens into the killing cones. The dog in the middle left of this picture is the one that managed to sneak off with a chicken. If you look close you can see it's scheming something.&lt;br /&gt;&lt;br /&gt;Picture of the plucker.&lt;br /&gt;&lt;br /&gt;The set up: Killing cones (orange) are in the background; in the center is a tub of water heated to 150 degrees F (water temperature is critical for proper plucking); in the foreground is the plucker. On the back of the red pick up truck are two boxes of 2-gallon freezer bags.&lt;br /&gt;&lt;br /&gt;A picture of the flock just before the operation commenced.&lt;br /&gt;&lt;br /&gt;The chickens are Cornish X, a hybrid. They are only about 7 weeks old. Dressed weight ranged from 3.9 lbs. to 6.4 pounds. Most of them were just over 5 pounds, perfect roasting chickens.&lt;br /&gt;&lt;br /&gt;Clem and Waite have another 50 day-old chicks arriving Monday, June 22. Wire will be strung between the posts and the plants will be secured to the wire as the season progresses. It's hard to see, but there are 8 hills of watermelons in the plastic area - 24 plants, all transplants from the greenhouse. The plastic absorbs heat and holds down weeds.&lt;/div&gt; &lt;div&gt; &lt;/div&gt; &lt;div&gt;6. Three full rows of Bellstar paste tomatoes transplanted June 2. Each of the first three rows (from the left) has 22 plants. The fourth row has only 6 planted so far. That's it for Bellstar: 72 plants. I will add Oregon Spring to this area but will run out of space here. I have 126 Oregon Spring plants and will have to put the others elsewhere. Then I have about 250 other tomatoes to put in. &lt;/div&gt; &lt;div&gt; &lt;/div&gt; &lt;div&gt;Space is rapidly filling up and I've not even planted corn yet. I might do that today. I'm thinking I'll plant it very close together to conserve space. As a friend of mine said, 'You do not want a tomato plant that a cage can hold up.' In other words, any such plant is too small. As I recall you noticed trouble with cages last year. I think your system with that metal grid last year was good. &lt;/div&gt; &lt;div&gt; &lt;/div&gt; &lt;div&gt;What I'm doing this year is planting the one type in rows without staking, as I did last year. They don't look so pretty, but it's the most efficient way for me because I'm doing so many. With the others, I'm doing a post and wire system. In fact, I put in more posts Sunday. Then I'll string two wires on each set of posts, probably at 12 inches high and at 30 inches high. As the plants grow, I'll attach them to the wires with surveyor's tape unless I come up with a cheaper alternative. &lt;/div&gt; &lt;div&gt; &lt;/div&gt; &lt;div&gt;One other concept I've had and not yet tried is this: set in the cedar posts and then run a wire the height of the cages. Then set the cages and secure them to the wire so that they won't fall over. I think that's a pretty quick, good-looking method for you if you're only doing, say, 12-24 tomato plants. By "Early Spring" Waite means mid-to-late May. He usually does not put out frost-sensitive plants until the first week in June, althought sometimes he puts out a few and takes the chance on a late frost.&lt;br /&gt;&lt;div&gt;As of May 30, he had set out only 1 hill of watermelon and about 15 small Thai Basil plants. &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt; On the right, above, is a row of Azuki beans. The rest of this area consists of two rows each of Magic Molly, French Red Fingerlings and Kennebec potatoes. All are planted very close together. He sometimes needs to be rescued from playing with the kids down the road because he is too weak to run home. Kinue feeds him glucosamine, which helps, and the backrubs help too. Lewis offers meat from the table. We all want Buddy to live a lot longer. He adds a certain whooooo to the garden atmosphere. It's a formatting problem I'm working on.&lt;br /&gt;&lt;br /&gt;Here is a picture of the deck on his house cleared for assembly of the greenhouse on April 6.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;In the next picture, the gable ends and the two sections of the front wall are up.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;In this picture, the rafters are up. Each gable end has a rafter and then thre are 7 other rafters that are installed to complete the roof framing. Of course the ledger is also up. The ledger consists of two pieces. There is a support stud in the middle.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Here two of the frame pieces for the bench are installed. There are two other frame pieces for benches on the sides.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Here is the greenhouse with the plastic installed. Waite has developed what he calls his "Deer Deterrent System" consisting of several layers of security. First he strings monofilament line; deer become confused when they touch something they can't see. Then he uses an electric fence. He also scatters dog and human hair throughout the garden. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;He has also come up with an idea that seems to work fairly well. He downloaded various sounds from the internet that he figures would scare deer, including wolves howling and coyotes ("coy dogs" in Vermont) yipping. He put these on an MP3 Player and hooked the MP3 up to speakers which are set in the garden. The whole system is on a timer: off in the day, on at night. The sounds are set to play randomly with 5 to 6 minutes of silence between.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;For 2009 he's come up with an enhancement: A coyote decoy. These are actually made to attract coyotes as apparently in some parts of the country hunting coyotes is a sport. Waite's using his as part of his DDS. He disassembled an old Schaeffer Beer advertising clock that used to hang in a bar. It had a rotating motor. He's salvaged the motor and will attach the coyote decoy to the mechanism so that the decoy will rotate. (He has run an underground electrical wire out to the edge of his garden to power the fencer and the MP3 system - and now the rotating coyote.)&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;He likes to get the DDS set up by the middle of April as deer are then establishing their summer routines. If he can prevent the deer from establishing his garden area as part of their routine, it's more likely they'll not bother it. Once they get in it's harder to get them out. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Here's a picture of the decoy. He stores them in bags and in fenced containment areas. The leaves are used for mulch the following year. He often mixes other fruit with the cider, as shown in this picture of some apple/grape cider.  Here is a picture of his raising a toast to the bounty of the land as the sun sets. Note the mulched garden and bagged leaves in the background. &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;Some years he also makes wine, but in 2008 all grapes went into grape jam. His wife does the grape jam. She also makes blueberry jam. In 2008 she made well over 100 pints of jam. He also has two 21-cubic foot freezers that he fills with vegetables every year. His gapes include Worden, Van Buren, Beta and Blue Belle. In all he has about 30 grape vines; he has about 30 blueberry plants. He has 6 or 7 apples, but each is a native variety. He didn't plant any of them. They just came up years and years ago and he been maintaining them. He has one three-on-one pear tree that produced some pears one year, but it's a Zone 4 tree and so not very productive. A few years ago he bought two Staceyville and one Summer Crisp Zone 3 pear trees from Fedco. He's hoping to get fruit in the Fall of 2009. For months&lt;br /&gt;now, Waite has been teaching me about the&lt;br /&gt;complexities of mulching. To bring you&lt;br /&gt;up to date, we should begin at the very&lt;br /&gt;beginning.....&lt;br /&gt;&lt;br /&gt;A long time ago the garden area was a&lt;br /&gt;pasture for Holsteins. When Waite&lt;br /&gt;purchased the land in 2002 he fenced&lt;br /&gt;in some pigs to help clear the land.&lt;br /&gt;You can see part of the fence in the picture&lt;br /&gt;on the left. Then he bought a small used&lt;br /&gt;Massey-Ferguson tractor with a tiller&lt;br /&gt;and started putting in cover crops&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;and tilling them in and adding leaves&lt;br /&gt;to amend the soil. You can see the&lt;br /&gt;newly-emerged winter rye in both&lt;br /&gt;pictures, which were taken in early&lt;br /&gt;November of 2003. &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;He started gardening on this land in 2003.&lt;br /&gt;A major part of the overall vision was to use&lt;br /&gt;leaves as mulch and to allow them to sheet&lt;br /&gt;compost. The bare area in the foreground is for later planting of lettuce or short-season (50-day) beans so that harvests can be staggered. Last year, as Dawn stealthily&lt;br /&gt;crept towards the leeks with a plastic&lt;br /&gt;bag and pocket knife in hand, she&lt;br /&gt;jumped as she heard a deep voice&lt;br /&gt;from behind the garden wall: "step&lt;br /&gt;away from the leeks." Harris Seed at &lt;a href="http://www.harrisseeds.com/"&gt;http://www.harrisseeds.com/&lt;/a&gt; has very competitive prices.
